(shee-TAH-kee ...) - A dark oriental mushroom widely used as a food. Several anticancer substances have been found in shiitake mushrooms, including lentinan, which has been studied in Japan as a treatment for stomach and colorectal cancer. The scientific name is Lentinus edodes.
