This phase II trial evaluates the effect of a watercress preparation on different toxicants and cancer causing agents found in the environment and cigarette smoke. Watercress may enhance the detoxification of multiple environmental toxicants and cancer causing agents.

PRIMARY OBJECTIVE:
I. To conduct a clinical trial with 350 subjects (both non-smokers and smokers) to determine the effects of the watercress preparation on detoxification of environmental toxicants and carcinogens.
OUTLINE: Participants are randomized to 1 of 2 arms.
ARM I: Participants receive watercress preparation orally (PO) three times daily (TID) for 14 days. After 4 weeks, participants crossover to Arm II.
ARM II: Participants receive placebo PO TID for 14 days. After 4 weeks, participants crossover Arm I.
